The tasty gastronomic diversity that the region of Arequipa offers has always been one more reason for the pride that the inhabitants of this Southern area of Peru feel. Although the warm temperament of the natives of this region has moved them to share the best they have to offer of their food with the visitors to this city, local gastronomy has not yet reached the levels it deserves.
Arequipa is located between the sea and the mountains; therefore, its markets generously display products from all the confines of this privileged country. From the immense ocean, fresh fish arrives in The White City in just a couple of hours. Likewise, it is not unusual to find jungle products mixed in with local produce.
All of this evidences this area’s great culinary wealth, and why Arequipenean gastronomy has become one of the most important aspects of the local economy and a driving force for tourist visits.
It is for this reason that AGAR (Gastronomic Association of Arequipa) was born. Its mission is to tell the world about a place in a South American country where all the fundamental elements that a delectable plate of food must unite with passion and ingenuity.
